This course provides the highest level of practical training to equip learners with the skills required to work at the cutting edge of the catering industry in hotels and restaurants
Learners will develop their culinary skills to the highest level to prepare them for employment in the Hospitality industry. Opportunities to enter competitions at local and national level will allow learners to practise their communication and teamwork skills. In addition to this they will be able to showcase their talent to other professionals in the industry.
Students will learn;
- Develop productive working relationships and colleagues
- Maintain the health, hygiene, safety and security of the working environment
- Prepare and cook complex fish dishes
- Prepare and cook complex meat dishes
- Prepare and cook complex poultry dishes
- Prepare, cook and finish complex hot sauces
- Prepare, cook and finish complex soups
- Contribute to the development of recipes and resources
- Maintain food safety when storing preparing and cooking food.
- Prepare, cook and finish complex cold desserts
An NVQ Level 3 in Professional Cookery, developing key skills and knowledge through practical sessions and theory lessons related to Hospitality and catering.
Extra Studies:Maths and English GCSE, enrichment activities, participating in competitions and work placement.
This is a practical based course. You will gain work experience through working in the bistro and training kitchens. These sessions are underpinned with relevant theory sessions
You will be assessed in a variety of ways including: Synoptic assessments, Practical assessments, Written assignments.
- Level 2 Diploma in Culinary skills / Professional Cookery,
- 5 GCSEs grades 9-4 / (A*-C),
- Relevant industry experience.

You will be able to progress onto a Level 4 NVQ Kitchen Management or seek employment in the Hospitality and Catering sector.
